Interview Appointment

I know that we can book an appointment for visitor visa through VFS website. I did that for my mother in law. When we do that - they give us a list of documents to be sent to them via courier.
All these documents are fine.

However, I am also sending my mother in law - an invitiation letter, my employment letter, my bank statement.

My question is:

These additional documents that I am going to send her - should they be submitted to VFS when we send the courier with copies of other documents OR should these supporting docs from my side - just be carried by her when she goes to her actual interivew?

What do people normally do in this situation?

I have a question for you, when you fixed up appt on web, at that time do you need to have all documents ready to be sent immediately there after?

In my case I am in process of getting all documents ready and it may take about a week or two to get them all done. Can I get an appt now on web for say March'05 or so and subsequently send documents in week or two from now?
