I-864 requested 3 days before interview

My wife and I are sponsoring my son's fiance. All of the paperwork seemed to be complete and the interview is set for this week. Now they're asking for Form I-864 from us which includes the last 3 years of tax returns. Our income is sufficient but our problem is I am employed several places and we own 4 businesses. Our taxes are always complicated so we always file extensions so that our accountant can complete our taxes. We have yet to file taxes this year but we have filed all of the necessary extensions. So what can we provide that will suffice for this years tax filings? We do have W2's and 1099's that will be reflected once the taxes are filed and we also have recent pay stubs for this year-to-date. Any suggestions?

Did you mean your son's wife? I-864 is not required for bringing a fiance to the US.

Good. Send the W2s and 1099s and recent paystubs, along with an explanation that the 2011 is not included because you applied for an extension until October.

After some research, I found out you should be right. It seems the 864 should be submitted after she's in the US and married and in the process of AOS. So, why would the embassy in Bahrain require it for the interview? Also, they want my original signature and not an electronic copy. Even if I could send it today it wouldn't arrive there until Late Thursday after the interview. Maybe I'll call the embassy there later tonight after they open tomorrow.
