Which one should I file? Also, should I list my wife's income also. My income is over 100k, is that enough for parents?

I-864EZ is just a simplified for for people who meet certain conditions. Anyone who can use I-864EZ can also use I-864. If your own income is enough (and 100k should be more than enough), you don't need to use your wife's income, and so you should be able to use I-864EZ if you want.
