After my spouse gets his USC, he's filing my GC petition. We estimate that he'd get his USC around May/June 2007. Our second anniversary is on Oct 2007. Does this mean we would be considered married less than 2 years category? or is it based on the date you have an interview?

Thanks.

It depends on when you become a permanent resident.
If you become a permanent resident after your second anniversary, then you receive a 10-year green card and you don't need to file for I-751.

The conditional permanent resident card is granted to those cases approved before the 2nd anniversary of marriage, which usually happens at the interview if not later. (The date you file the I-130 and/or I-485 does not count for the conditional issue).
