My conditional GC expires March 31st 2007... and I just has a few qs

(1) Can I file the I-751 ANYTIME between now and March 31st?
I mean once it reaches them before the GC expires thats ok right?

(Not that I'm going to wait, I'm working on getting all the docs/statements etc together this weekend, just want to make sure I understand the 90 day thing right)

(2) Evidence needed - regarding this, is it necessary to include affidavits?
If so is this just a letter signed by the person stating they know you
etc? What I mean is it doesn't need to be notarized does it? Just
wondering how much evidence you guys included.. I don't want to go
overboard, but I also don't want them requesting more info from me.
 
I think it would have been wise to send the I751 on the 90th day before expiration of conditional green card so you can receive your receipt before your card expires. But since that date has passed mail application as soon as possible. Your receipt extends the validity of your green card for 1 year.

For affadavits, you can ask either your relatives or friends who know you as a married couple to write it.
It does not need to be notarized.Besides the details of how this person acquired the knowledge about you as a couple, it should include the person's signature, address and phone number.
You should include bank statements copies from the joint accounts 3 or 4 during different months over last 2 years, joint lease, beneficiaries from Retirement accounts, joint insurance cards, pictures of you together.
Travel itineraries of trips taken together, if you have saved any. I also included copies of christmas cards that we received together from our families (this was a little extra). I believe in giving more than enough to USCIS than very little.

Hope this helps. I think, your best bet would be to send everything as soon as possible, before the card expires in the end of March.
