I have filed I-485 1 year back and my I-140/EAD got approved on 05/04. This is for future employment. I am not working for the sponsoring company.

Can I join full time on my EAD with another company at this point. What are the pros and cons.?

Sure you can join another company at this point, you can also use AC21 to work for this company even after your 485 is approved (As long as you file AC21 with USCIS BEFORE your 485 is approved)

Cons are: It may trigger an RFE
