Could anyone tell me why some people go through the AOS interview, while some people simply get an approval notice to appear for stamping? What triggers to the interview to occur?
 
The majority of cases do not require an interview. However, some case get transfered to local offices for interviews for the one or more of the following reasons:

1- Quality control, where CIS want to be sure the system works,
2- Indication or suspecion of fraud on one of the applications,
3- Criminal record,
4- In consistency between applications,
5- Status violation,
 
I got the above information from the I-485 Standard Operations Manual. I once read in a thread, long ago, that a case was transfered because the officer wanted to bring the applicant's attention to a comment written by the doctor on his medical exam.
 
If a person got married shortly before or especially during AOS and added the spouse to the application, they often transfer to the local office to make sure the marriage is genuine. But it kind of goes under fraud category that Wella mentioned.

Just read yesterday in the I485 SOP:

7. Applicatns with Class A or B condition on the medical exam from.
