I-485 by myself and employment history

It seems to me that I-485 related documents are not very
complicated. If laywers charge about 1,000 for this, I am
wondering if I could do it myself.

Are there good websites on the complete list of documents
that are required? Is a cover letter needed? and what's the
format if it is needed?

Or, what are the arguments for asking a lawyer to do this
instead of doing it by myself. It seems to me that most people
use attorneys.

I do have two questions about I-485

(1) Visa number

Is this the Control Number appearing in the visa, something
like 2002xxxxxxxxxx? or the 8 digit number at the lower-right
corner.

(2) Employment history
I came here a couple of years ago as an F1 student. I was
sent here by an oversea company. That means the company
paid tuitions for me, and sent me my salary through bank
wire-transfer monthly. During the whole period, I remained on the
payroll of that oversea company. In this sense, I could be
thought as employer of the company. However, this could
also be interpreted as scholarship or fellowship since I did
not provide any service for them, and my only job assignment
was to be a full time student at a US university.

After I took a reserach position in a university, I still maintain
the same relationship with the company except the company does not wire-transfer
money to me monthly, but it still deposits some money into
my oversea bank accounts and send me my bonus twice a year
through wire transfer to compensate the difference. But, again,
I did not provide services to them. I just do my research for
the university according to an informal agreement between
the university and the company which have collaborated
for more than a decade.

Should I write down this company as my employer in the
employment history? Would this be an issue of concern
that raises the flag that I did unauthorized work while on F1?

If I interpret it as Scholarship and don't include it in the
employment history, then would this be a problem
because I had it included in my C.V. that was submitted
for the I-140 petition.

I browsed laws and reglutions about immigration and
non-immigration from the BCIS website, but could not
find legal definitions about "employment" or "unathorized
work"
