Can someone please provide clarifications for the following?

1.The I-485 is the property of the employee. What about the I-140? Does it belong to the employee? Can you take it along, if for some reason you need to change jobs? What if the company decides to revoke it or use it for someone else?

2. I've heard that you can keep the priority date if you need to change jobs after the I-140 approval, if the new employer files the labor and I-140 for you. Is that correct? Until how much time after the job change can the new employer file the new application? Does the new application have to be for the same job/role, location, or same category (EB-2, EB-3, etc)?

1. Not sure about I-485, but I-140 belong to the employer. You are eligible to port the PD after job change provided the employer did not revoked it.
2. Yes. Depends on the employer. There are postings about EB3 PD is ported to an EB2 case.
