My FUTURE employer filed I-140 under Labor Substitution in Dec/2006.Lawyer go the approval notice in postal mail in March/2007.

But online @ www.uscis.gov it is still showing as pending with a last activity date of 8/28/2007

What should i do ?

as long as you have the receipt notice saying I-140 is approved you will be fine. immigration computer system is one of the worst ones and sometimes adjudicating officers forget to update it. ;) :D

Do you guys think that I should send USCIS a letter giving copy of I-140 receipt notice, I-140 approval notice and screen shot of status at www.uscis.gov

and request them to correct the status ?

no your status is ok and I-140 is not an status at all. it is simply and petition on behalf of your employer to get you in. they most likely wont talk to you. dont make it worst than what it is. during the I-485 processing, officers look at your physical file and not Case Status Update off the website( at least we can hope for it) if they ever did, you do have a solid proof that your I-140 was approved and denying I-485 is baseless.
instead of all these, why dont you use the freedom of information act to get a copy your immigration file from them so you know what is in your file. wont cost you and it takes about a year. but then again you will be waiting for that greencard interview for quite a while.
