You can provide 2008/2009/2010 if you want, since the due date for 2011 tax returns is a few months away. But if you file for 2011 before sending the N-400, include transcripts for 2009/2010/2011.
You don't need to send them with the application, you can bring them to the interview.

It means you can choose to provide one or more than one of the items listed. "AND" would mean you have to provide all of them.When they say OR does this mean I can just send in the tax transcripts alone and that's it?

Fanx dude! One more question: we filed married filing separately last year for tax planning purposes but 2009 was joint and so too will be 2011's. Do we have to provide BOTH transcripts of each spouse when we filed separately for 2009 or can I carry mine alone since it has her SSN details on there?
You can bring yours alone. You may have to explain in the interview why you chose married-filing-separately (tell them the approximate amount you saved by filing separately).
