H1B spouse of US citizen who is unemployed

I have an H1B
my wife is a citizen. She recently quit her job (short of 5 years of service) in May.
She is now transitioning into becoming a health coach, so I guess she could be considered self-employed........but she doesn't really have any money since she isn't finished her training to become a health coach

I am looking for advice on two things

1) Should my wife simply put she is unemployed (to cause less confusion)
2) I read that my income can be included and we wont need a joint sponsor
2b) Will I need a letter from my job?

Question 15 in section C? Section C is "information about your relative", i.e. the petitioner's relative, i.e. the immigrant, i.e. you.

Your wife should fill out the I-130, while you fill out the I-485.

So the "your relative" questions in Section C of the I-130 are about you, and you have a job.
 
yes, yes and yes.

the letter from employer will need to state your position (to make sure its not a contractual position) and the salary.
