Once I have filed the I-485, applied using the I-765 form and received the EAD card, do I still have to get the 7th year H-1B extension, or am I covered by the EAD card until I get the Green Card?

Choosing the EAD, post 6 years H extension or both depends on your preference. No much difference. They all let you keep working.

Isn't an advantage of an EAD that you can for example take a part-time job without having to go through the H-1B application hassle for the ver same part-time job, but just start working immediately?

You are talking about earning extra money with your additional energy. But most of people only work 8 hours and enjoy their rest of time. If you choose the EAD before the H-1B, then the EAD is sufficient for your intention.

I work as a school teacher, and we have several breaks, including a long summer vacation, so I am looking for something to do that can also earn me money. With an EAD I understand I can accept any job for that purpose to use for short-term summer jobs or teaching evening courses etc., while with an H-1B, the employer has to go through the hassel of applying for one.
