1. That person, since he/she has a EAD, should try and get a job with similar description as soon as possible, preferably before replying to the RFE.
2. If (s)he got RFE, assuming it is employment based, then that person should respond to it by providing the info asked on the RFE, like new job offer letter and any pay-stubs that has been received, etc.
3. It is advantageous to go through a good immigration lawyer for this process

(sometimes, by virtue, they become Immigration Ignorant Officer, ILIOs - Immigration Lack-of Information Officer, etc. whatever suits the need. just kidding)
