Goint out of US in between jobs

I have a scheduled trip to go out of the country before I join a new company and after I resign to my sponsoring company. Will I have a problem coming back even if I have Advance Parole and EAD and already on my 19th month on I-485?

I don't see any problem at the port of entry. You can go out of the country on AP and come back safely. To be on safe side, take the appointment letter from the future company and pay stubs from the previous one.

Paranoid I am, I am worried that my sponsoring company would pull out my 485 on my last day working for them, reflecting Intent to deny status on my 485, and me, hopless to do anything for being out of the country. When I come back and immigration check on my legality, will they be able to check of my employment status?
 
No one can pull out your 485 case. They can try to withdraw the 140. But if 180 days have passed from filing 485, BCIS will not void the 140. Nonethless some stupid officers did the same though 180 days have passed, in very rare cases though. Rest assured, you can travel with peace. BCIS at the port of entry can make a call to your employer to find out about your employment. (This is very rare though.)
 
Even if your employer revoke I-140, BCIS might send RFE for I-485 or Intent to deny for I-485 if new employment details were not provided to BCIS. Intent to deny is similar to RFE but reply has to be provided within 30 days. So to be on safer side plan your trip for less than 30 days. It's just my suggestion, ignore it if it confuses you.
