getting appointment dates for H-1B visa in Mumbai consulate during December

I hear getting appointment dates in December is pretty difficult for any visa as a lot of people apply during the holidays they visit India. Has anyone booked and got dates for H-1B during Dec 15 to Jan 5?

Is going to Mexico/Canada an advisable strategy? Mine will be H-1B renewal case for the same employer.

Can someone please advise?
