To use AC21 I believe you have to change employer before GC approval. After GC approval if you do not work for the GC sponsor, it could be misconstrued as fraud.
This is what I suggest: Wait until your 485 has been unadjudicated for more than 180 days. Then inform USCIS of change of employer using AC21. This will usually trigger RFE asking for employment verification letter from new employer. If the new job is same or similar to your labor certification, then you are all set. If you are unlucky you may be invited for an interview before your GC is approved.
If you get GC before 180 days then you have to work for the petitioning employer. Some people suggest that six months is enough to prove that you intended to work for the employer.
