My wife is travelling out of US with the AOS pending. We received our receipts last week. My question is that if she gets a FP notice while she is out, can we reschedule the appointment at a later date?

Yes you can - the details of rescheduling will be on the FP notice. However avoid doing this as this can delay your case to some extend.

I second what helper suggested. I would not delay or
reschedule FP appoinment if I were you.

Do it as quickly as possible to get yourself eligible
for adjudication.
