I'm going to submit my N400 application but I'll be out of country for 2 months. If they ask me to do fingerprint during while I'm gone, can I reschedule it after I come back? Will it cause any problems? Or should I submit my application after I come back? Thank you!

There is no need to reschedule it. I was once told by an immigration officer that you have 3 months from the day of your FP appointment to get your FP done. After that, they would consider your application to be abandoned. I understand, you might be 1 month late (at most) from your appnt. You should be fine.
