F1, graduating from college, summer research at new school

Hello,

I am graduating for college this May and starting gradschool in August. The same grad school offered me summer research starting no later than mid June. I thought I'd go home for ~2 weeks and then come back for the research but I realized that way my grad school would only have 2 weeks to get me a new I-20 ready AND mail it to me to Poland, since I need it to re-enter the country. This is probably doable but sounds really stressful, so whatever, I can as well not go home. So now I am wondering when would I be legally able to start research at my new grad school? They will transfer my SEVIS on the day of the graduation, am I officially a student at the new grad school the moment that happens? Do I need to physically hold a new I-20 to start the research? If I'm not going home I'd be happy to start the research right away, but can I do it?
