I have an H1 approval since Feb 2006. However, my OPT ends in May 2006 so my employer has not been cutting my SS tax and medicare. He only deducted the federal tax. The SS tax and medicare will be deducted May 2006 onwards. I am going for H1 stamping to India in June 2006. By then, I will have only 2 pay stubs where the SS tax has been cut. Would that matter at the visa interview?

When you are on F-1, you don't need to pay any medical and SS tax. If the company took those out from your pay check, you can tell them and they should refund you the money. If your previous employers were not willing to refund you, you can file a form and report to the USCIS.
I found that out after I have been working for 1 year, got al lthe money back at once
