Hi,

I wanted to find out if the derivative spouse's employment letter also have to be notarized for the cp interview. Do we have to take any other documents or employment letter will be enough.

Not necessary. You may just carry it (notarization not required )if you have said in the I-134 that he/she is not dependent on you.

The derivative spouse is on H-1B so does the employment letter still doesn't need to be notarized.

Only employment letter of the primary candidate needs to be notarized. Even if derivative spouse is on H-1B there is no need to carry a notarized employment letter from spouse's employer. Your spouse can carry a simple employment letter..need not be notarized!~
