What to show empoyer for employment authorization purpose? The physical Green card, or the Social Security Card? Would stamp on passport work also?

Stamp /SSN or Card/SSN. Either combination should be sufficient.

Your employer needs to be assured that you have a right to work in the US ( that is what Card or Stamp for). He also needs to report and track your earnings to IRS and local tax authorities, that is why, you need to show your SSN as well.

Any one of the following:

Actual green card, or

SS card (without any restrictions) plus photo id ( passport, DL), or

passport with temp I-551 stamp.

just to be legally correct, read form I-9 requirements by which employers are required to verify one's eligibility to work in the US: you can see the list of documents that is acceptable.
