Does a person in EB1-EA category have to get a notarized employment letter as well? How soon in advance can I get that letter prepared? If I find out that my appointment is next month, can I get the letter with this month's date? Thanks.
 
For CP you will have to get a notarize employment letter.

Usually a document is valid for 6 mos. for the consulate. But it is better to get it as close to the interview as possible.
