Did anyone have the experience of handling this situation when there was a gap in the validity periods of your old and new EAD's.
If you were working, did you have to resign or just took unpaid leave for the gap? ... or any other option

Unpaid leave would be fine. Also you are covered by 245-k for up to 180 days of unauthorized employment.

Do you mean one can work without EAD , rather one can work while waiting for EAD ?. Any information on 245-k is appreciated
I didn't say you CAN work without EAD. What I say is if you work without authorization USCIS can pardon you if you work less then 180 days.
And "without authorization" means that you don't have anything that allow you to work. I don't understand the difference "without EAD" or "while waiting for EAD". There could be only 2 states: you have work authorization (H1, L1, EAD, ...) or you have no. If your EAD expired and you don't have any other status like H1, you don't have work authorization.
Regarding 245-k check this link murthy
-------------
Section 245(k) enables a person who is adjusting status in an employment-based category (whether on the basis of a labor certification or in one of the special Green Card categories that does not require a labor certification or job offer) to adjust, even if s/he has been out of status or worked without authorization for less than 180 days.
