EAD Cards and 180 days of pending I485

Can you please guide me if I could take up multiple jobs or take up some business with an approved EAD card.My I485 is under process for over 180 days now.
If yes what are the things I need to take care so that my GC process doesn't get affected

You can work at ANY JOB under an EAD. There is nothing to do. This is a benefit of being under Adjustment of status. Only thing you need to do is make sure you renew your EAD well in advance of it expiring.

Yes you can ....
One thing to watch out for - when you use your EAD, you automatically lose your non-immigrant status ( H or L ). If you still have a day job on H1, you need to change that to EAD as well.
Otherwise, you are good to go
