Anything short of citizenship will have an expiry date. Even GC has a renewal date. Then how can one can have an interim GC without a renewal date. Think, if the GC is approved then there is no problem for BCIS regarding the interim GC, but if there is a problem then the BCIS would have to hunt the person down with an interim GC. Moreover, EAD and AP would not become obselete in the near future as BCIS is a bureaucratic organization. Therefore, the minimum that can be done is to increase the duration of EAD and AP. Noboby likes to shell out checks every year for these except BCIS.
