Does the use of AP affect the approval date of I-485?

Nothing suggests either way. Had 3 APs. Never used any. still waiting.

Once you get your first AP, do you have to renew it if you are certain that you're never going to use it again?

If you are on H1B Visa , then you do not need AP to Travel outside US. If you have used EAD to work, then you need an AP to Travel outside US. If you do not intend to Travel outside US then you do not need an AP. Its an optional document. Most People apply for AP as a contingency for Travel outside US incase of any Emergency.
