Do you quit job if renew EAD does not com in time?

Hello all,
I read that you can apply for EAD only 120 days before the current EAD expires (right?)
So when we do the application what happens if you actually do not get your new EAD card and the old one expires. Do you need to temporary quit your job or is there any specific procedure to be followed ?

I was trying to see if we can book INFOPASS appointment and the website said there are no appointment the center has right now.

Please let me know.
