Different Processing Dates

I have seen multiple processing dates for EAD in
http://www.bcis.gov site.

1. Distict Office -San Jose,CA(EAD processing date Nov 17th)
2. California Service Center (EAD processing date Aug 26th)
3 National Service Center (some other date)

What is the difference between these three? Which one I should consider?
