I am wondering what date is gonna be on GC if a person had an approval in May but had an interview in January. I was always thinking that in this case the date on GC would be the date when interview was. Am I right?

Wrong. The date on GC is the day you became a permanent resident, which is the day of the official approval.
So, if you got approved in may, the date on GC will be 06/.../06

The I-485 approval date.

In this case I have another question. What if interview was before my 2 year wedding anniversary but GC was approved after 2 year anniversary, what kind of GC do I get?

You'll get a 10-year unconditional GC.

FYI, my GC's issue date was the I-130 approval date (my I-485 was approved 5 days after my I-130 was approved).

Actually, I was in the same situation and got conditional. My interview was one week before the 2nd anniversary, and my approval was 2,5 yeaks after. It is stated that if at the moment of the interview the marriage is less then 2 years, they will give you conditional GC.

Your permanent residence status will be conditional if it is based on a marriage that was less than two years old on the day you were given permanent residence.

Based on this i would say your GC would be unconditional, but i have seen otherwise in this forum.
