CP, security check and change of employer

My employer sponsored me for EB-1 green card, I-140 was approved, I did CP and had my interview in the consulate outside the US last May.

I haven't received the green card yet, since I was told that the consulate had to do an additional administrative processing (security clearance), which has been pending for 7 months already.

What will happen if I change employers now?
My old employer is willing to keep me on the unpaid leave with the new employer. The new employer is in the same fields.

Will I still be able to receive a green card after the security check is complete or they would require
the letter and paystub from my previous employer?

I'm not sure about the change, if all the tranfer is valid, it would seem OK.

But if I were you, I would cling to job you are in and wait for the CP to get over.

I am curious, did they not stamp an Immigrant visa at the consulate and cancel your old H1 visa?
Shouldn't you be in a temporary immigrant status and have to go to local INS after 1 yr for an extension?
