Normally it takes about 8 months +/ - 2 months for a CP interview in China after I-140 approval assuming one had opted for CP in the I-140 application.
For experiences of CP in china, search for chinese consulates (guangzhou) name in the consular process thread and you will come across a few experiences!

If couple applied GC at same time frame but seperately(individual cases), what is cons & pros for one go 485 route, and the other go for CP? In addition, what is the cons & pros for filing through 485 vs. CP for the person came to states with F1 and later changed to H1B?

Answer: No problems. Number of people do this. But there is a chance that USCIS may get confused seeing one name as primary on one application and the same name as derivative on the other. Make sure that things as minute as these are explicitly clarified in both your applications.

Answer: No pros or cons of 485 vs CP in context of F-1 to H-1B conversion. I too came on F-1 and then converted to H-1B and got my GC about 3-4 months back...no questions asked/ issues surfaced (not that I was expecting any issues). Remember one thing 485 averages 2.5-3 years since its application and CP about 6-8 months since I-140 approval irrespective of the context in which you are asking.
