Question for count of days with respect to PR requirements -

If one is employed in Canada and undertakes job-related travel overseas, is it considered being on the job and counted towards the two year period or does one need to compensate the days of travel?

Yes, as long as it is Canadian employer. Note it has to have other employees so you can't set your self up as an employer and then contract yourself overseas.
