Change of employer in 7th year

Hi I'm new to this forum. I hope this is the right place to post my messsage.

I'm in 7th year extension now, expiring in July 2005. I got my Labor filed through Philadelphia in May 2004. Due to the processing is very slow I',m trying to change my employer. The new employer is ready to give me substitute labor and file my 140 and 485. My doubts are

1) Can I change my employer while I'm in 7th year extension
2) Can I go for substitute labor if skill set matches, and what are the other check list items I need to check before I go to new employer
3) Can my new employer file my 8th year extension based on substitute labor which he is going to provide for me.
4) Can I get my labor receipt no from my old employer in order to keep back up for my 8th year extension.

Thanks RincyTom for your reply. I have some more questions too due to I'm in 7th year extension.

1) Can I sponsor my in-laws to visit U.S while I'm in 7th year extension.
2) My wife has a cousin bother in U.S, he has his Green Card. Can he sponsor my wife's parents ?. Apart from son or son-in-law can cousins also sponsor their uncles?.
