Change in Job with totally different field after GC

Hello Everyone,

Gurus please seek you advise. I am currently on H4. I have a Masters degree from US. I preparing for my USMLE board exam. I got an offer for a Job as Assistant Manager for a Convinent store as I had similar work experience from my home country. I have accepted the job and they have provided me a substitution Labor with PD 2005 which I have filed with I-485 & I-140 as dates are current.

My question is how long will it take to get GC based on current situation with PD of 2005 (INDIA)?

After getting GC for how long do I have to work with GC sponsor as I am planning to apply for Residency in hospital in future?
Is it possible to work at convinent store for few months and than quit? Will it harm anytime in future?

I have mentioned to my GC sponsor that I will start work only once I get GC and not on work permit as in case if my I-485 gets rejected I do not have to go outside US and I can stay on nonimmigrat visa as currently I am on H4.

I appreciate you all for your input in this matter.
 
If you go by history....and current stats....of only 80k-90k filings of I-485 in June/July....I am guessing ROW may again fall short of using it's quota...

I am guessing the last quarter of (july-sep 2008 or july-sep 2009)....things may be current again...U can expect approval...then! Or, if you are lucky, may be October 2007 itself! Hee Hee!

I believe, usually they say - one needs to work for 6 months to 1 year ....for GC to be retained...
