I am currently holding an E-1 visa through my employer. My marriage based I-485 is pending. Can I change employers without a EAD?

No.
You need EAD to do so. Or wait for GC

Yes, if a company is willing to file for a H1/L1 visa for you. Easiest way is to file for EAD and switch employers or best is to wait for your GC
Did you file I-508? As an E visa holder, you enjoy certain diplomatic immunities and you need to waive those rights when you apply for AOS. If you did not file that form, you might get an RFE asking for that form.

Od you mean H1B? All H1Bs for this year are already taken alotted. Are there other H1s out there, if so, never mind.
