I am an American citizen living outside of the country with my husband. We have our final green card interview scheduled with the local consulate, however, he just received a job offer here he cannot refuse. If we cancel the green card process (or postpone for a period up to 2 years), what are the consequences? Is his tourist visa no longer valid because he has applied for the green card? Can he travel to the US to visit my family? Will this hurt his future immigration process?

It won't hurt future immigration process, however, visitor visa for him could be a thing of the past..

The consequences would be the need to expend the time and money again to reapply for a green card in the future (if he wants one). Now that the interview is so close, it cannot be postponed for any great length of time. However, once the approval is stamped in his passport, they allow a window of 6 months to enter the US.

With a pending green card, using the tourist visa is likely to be problematic (i.e. likelihood of being refused entry at the US airport), although it is not outright canceled until the green card is approved.

If he officially cancels the green card process now by submitting a withdrawal request in writing (with appropriate accompanying documentation like the I-130 approval so they know it's a legitimate request and can easily identify the case) before the interview or at the interview itself, it shouldn't be a problem to use the tourist visa to visit the US.
