Can one quit immediately afetr the I-485 approval and stamping in the passport?

I had an RFE asking me to send w2s paystub DE-6 docs etc. I sent it on 3/27/2001. It reached INS on 4/5/2001.
RD/ND 09/00
FP 12/00
AP 11/00
EAD 1/1/1
RFE 2/11/01
reply with docs 3/27/01
No update in the AVM so far. But RFE reply was received on 4/5/01

My company is not doing well. They\'d prefer employees with GC to resign or take vacation. Is it a problem to resign after getting GC stamp in passport.
How long it\'d take to get approval.
