I am not 100% confident, but fairly certain you can convert to Consuler processiong commonly referred to as CP. But it will take you another one year for the process and for you to get your letter....

You can do that. But you will not be able to get the interview unless your PD becomes current. You need to have H1B until that time and will not get EAD or AP.
Just use AP and stay for two months in India. You can show you were on the vacation if asked.
