Can I take another job (full time or part time) while I am waiting for my CP interview. This will be in addition to my current job in the same city/state.
Do I need to get another H1 for the new job (will it be a new H1 or current H1 transfer).

Unlike AOS, you cannot work without sponsorship while waiting for your interview. You can work for whomever sponsors you for an H1B, but you must work for your petitioning company after your interview if you have an employment-based GC (unless self-sponsored).
