Can I still file I-485(AOS)?

My I-140 approval notice(VSC) says "Petition has been approved, we have sent it to the NVC ...".
Does that mean I have to go with CP instead of AOS?
Can I choose to go AOS?

YES

Simply file AOS as usual. INS will pull back your apprived I140 when they open your file.
Do not worry. For safety, you may call NVC to retain your file (not forwarding to Consulate).
