No impact on her I485 if you change job. She can renew EAD, AP herself. Applying EAD, AP are easy, straightforward.

Eventhough your wife doesnot have any problems right now, you might have some problem issues when applying for citizenship later.
Since GC is approved for the future employment (good faith between you and the employer that you would work for them after GC approval), you will have to stick with the GC sponsored company for atleast 6months to a year.
If you have already been working for that employer, you can leave after 6 months. But, if you joined the company after GC approval you will have to stay there for a year. If the employer lays your off before 6 months, your GC should be OK.
Also, I think it would be a big mistake to change jobs before your wife's approval. It shouldn't take too long after your approval.
