I would be eligible to apply for citizenship in June 2005(Sept will be five years) and I have recently married. My spouse is under valid student M-1 visa till Jan. 2006 and I want to know when should I apply for her adjustment of status, now with my green card, or when I apply for my citizenship? Is there anything that I should be careful about? Thank you for your advise in advance

Basicly she will be out of status. Go home I guess unless she wants to be illegal in the time between her visa expiration and your NC and become eligible to send 130/485 package.
In case you want to file 130 for her now as LPR she still needs legal status until you get the NC and upgrade 130. Since as LPR petiotioner the 130 itself doesnt give any status.
However her visa is long enough I think to give you time. By the time her visa expires you should get the NC. I myself would suggest to file her docs as US citizent not as LPR. Thus you wont have to deal with upgrading cases and stuff. That's in case you really expect your NC prior to her visa expiration.
