Can approved NIW applicant adjust status while unemployment

My NIW I-140 has been approved. Due to graduation and other factors, by the time I adjust status and the USCIS requests further evidence, I may be unemployed because I will in-between grant proposals, even though I am doing research that is in the national interest. I will have plenty of money to support me and can show a affidavit of support, but can my I-485 still be approved?

This is dangerous. You may be denied an asked to leave country in 10 days. Someone I knew got approval notice. Went to local INS for stamping. He had been laid off just a day before. Officer casualy asked about current employment. He said he is laid off and will look for a job. Officer rejected GC and gave him deportation letter.
 
Thanks for the info. I know what you mean. They could still deny even though NIW doesn't require a job offer until having green card. I still wonder how it is when I have grant proposal pending while teaching part-time as adjunct faculty.
 
I believe you need to have a job (or atleast they should think u have a job) at the time of approval (if you dont get an RFE). If you do get an RFE, you need to show proof of employment at that time. Other than those two instances (which we can never predict when they might be), you can very well be out of job.
