Business setup with EAD

Currently I am on H1 and the GC is under process. My wife is on h4 and has got the interim EAD while I haven't received my EAD yet and our APs are also pending.

If my wife sets up a LLC or C corporation using her EAD will she loose her h4 status and the visa stamp on her passport becomes invalid? or she should wait for AP which pending for past 7 months.

NO, Your wife will not loose H4 status if she uses EAD to work/business. She will loose H4 status if anytime you or she enters US using AP OR You use EAD to work.
