I am planning to invite my mother and she has interview on second week of Jan05. My company has sent me the Employement Letter copy only not the Orginial.. .. Can any one tell me if the copy of the Employment letter is enough...

Usually for Visitor's visa you would obtain a letter of employment from the employer that is addressed to the 'Consulate General of United States....'.

So, if the letter is addressed to the CG it does not make sense sending a copy. Try and obtain an original from your employer per the format available at site Immihelp.com.

I cannot say for sure if the copy you have would work or give raise to an objection at the consulate.
