AP 2 copies
Copy of I 485 receipt


will that do

I also have


EAD card
Copy of approved I 140
approved LCA petition
Pay stubs
Bank statement


Do I need an employer letter saying I am going on vacation ?

You only need 2 APs and possibly 485 receipt (and passport). That's it. I wouldn't take anything else other than that.

Everything else is irrelevant.

i would suggest you take proof of your employment and last paystub. I heard POE is more tough on entrants now.

You need the AP and your passport - nothing else.
