AP - Questioned at port of entry

I entered US using AP last month and the immigration agent unusually asked me who my GC sponsor was?

I am leaving the US again and have changed jobs - if that question gets asked again do I mention the current employer or the one who originally sponsored my I-140 (I have not and plan not to file the AC 21 letter)

Since your new employer is not the one sponsoring the GC, you should tell the customs agent that your old employer is sponsoring your GC.

Unusually? When you use AP you should expect to be questioned thoroughly, and be glad if you aren't.

Being a frequent traveller on AP throughout Year 2006, I have always been amused by the thorough questioning during secondary inspection: Most repeated question at the same Port of Entry: Name of my parents? - As if I am going to answer differently after a week's trip.
