When they ask for FP do they ask to send or show any papers such as employment letter or paystubs?

No. You only need to show notice (i.e For FP) and somekind of identification document with photo. Driver license, EAD, passport, any/all are fine.

I was just curious about whether we can to Service center for FP without getting FP notice

I don't know, probably we can't. Otherwise everyone would have done it already instead of anxiously waiting for FP notices
